My own preference is Waxoyl. I have a jar full which I was given in 312BC and will probably last me out. Avoid ordinary greases as they will get more viscous in cold weather and create too much drag on the shaft.
I’ve also used molibdenum grease sold for model car bearings.
Suit yourself – there’s dozens of other options.
