The London Science Museum have a superb builder's model of the ship but unfortunately it is no longer on display since they closed their maritime gallery last year. I believe they may have extensively photographed the models before putting them into storage though.
There is an excellent 1:1200 scale waterline model plan in John Bowen's book Miniature Merchant Ships

which, taken together with decent photos of the Science museum model would be enough to construct a decent larger size working model although the underwater lines would need to be extrapolated.
There was an article with small scale plan in The Motorship dated March 1939 and according to John Bowen, the National Maritime Museum hold general arrangements plans of the ship following her 1947-48 refit.
