Your question is a little light on specifics, but in general terms you would use a latching RC switch to operate a radar array (motor) and an electronic forward-and-reverse motor speed controller for a winch motor. Frankly I see little point in remotely operating a radar sweep arm because they are usually left turning at all times, so you might just connect them to a manual switch.
Cranes are a law unto themselves as they often require two or three channels, depending on the type and the degree of function you require i.e. traverse, elevate/lower jib and raise/lower hook. They may also use servos or plain geared motors and that choice dictates how the connections are made.
