Higher capacity batteries of the same voltage will give longer run times. Provided that they are the same size and shape and the same connectors, they will probably weigh more and thus reduce speed a little. Not knowing either the internal layout or what actual electronics are fitted, I cannot comment on fitting a higher voltage battery, other than to say that if there was room for such, and IF the electronics and motors would stand up to it, that is the simplest way to get more performance. It is also the fastest way to potentially let the magic smoke out of the works.
A major refit of this kind of boat is rarely a good idea, since there is usually more work and cost involved that starting fresh. Best to enjoy this until you feel its time for something better, by which time you may have decided what "better" actually is.
