With regard to fittings, many people use superglue but it is not always that impact resistant. I would advise using 5 minute epoxy resin adhesive for most purposes. I also tend to drill a small hole into the base of the fitting and glue in a small peg or length of metal rod which is then fitted into a corresponding hole in the surface to which it is attached. That way you have both mechanical and glue strength and much less risk of the fitting being knocked off.
I’m not sure what you mean about the ‘anchor holes’. If you are referring to hawse pipes then it’s just a case of waiting until the foredeck is on and then drilling holes in the deck to correspond with where the chain comes up onto the windlass. Then simply connect the holes in the deck with the ones on the hull with suitable tubing faired off to fit flush at each end. Aluminium tube is probably best as it is easiest to file down.
