I have several unmarked ni-mh batteries which I would like to make up into useable packs. Is it possible to identify the mah capacity of them with a simple meter

No. The only way is by doing an empirical test.* Do charge/discharge sequences with a couple of meters (one for volts, the other for amps), and a clock and a pen and paper. Repeat the sequences until you are happy that results are consistent, then you have your answer,. Or the numbers that will lead to the answer

AA cells vary all the way from 1000mAH (old, probably past their life expectancy) up to 3000mAH, so just looking and guessing won't work. They might even, if old enough, be NiCads. There is a similar spread with other sizes.

They are NiMH and not LiPo? Some sizes are common to both.

*There are probably "smart" chargers that will tell you how much they "think" is in there.
