if your boat has two screws, you could reverse one and forward the other and that should turn the boat. albeit slowly

The diagram does not show, but am I right in thinking the two micro switches are closed, and each is opened when operated by the servo ?

yes thats how i planned it to work (the servo switches the micro switches on and off)
