For my part I don't know of any dedicated fittings for the Huntsman either (and if Dave Milbourn is not aware of any, my bet is there aren't any) nor are model boat fittings specifically at 1:8 scale all that thick on the ground.
However, depending on how exactly you want your model to follow either a generic or a particular Huntsman prototype, it might be possible to find at least some generic fittings of the kind you mention from a number of sources. This will require some patient trawling of websites and comparing sizes of e.g. cleats or anchors with what they should be if they were to 1:8 scale, and you might have to cheat here and there (say for example that a real-life cleat is 35 cm long by 5 cm wide, at 1:8 it should be 43.75 x 6.25 mm, but the one you find is 40 x 5, which would represent a scaled-up 32 x 4 cm; unless you are aiming for a very exact scale model, this should look quite allright).
